SIMPLE ROASTED GARLIC VEGGIES



INGREDIENTS:

  • 1 1/2 Large Heads of Broccoli, chopped
  • 2 1/2 Cups Baby Carrots
  • 3 Cups Brussels Sprouts, halved
  • 2-3 Tablespoons Olive Oil
  • 4 Cloves of Garlic, minced
  • 2 Teaspoons Kosher Salt
  • 1/2 Teaspoon Fresh Ground Black Pepper
  • 1/4 Cup Parmesan Cheese, grated

DIRECTIONS:

  1. Preheat the oven to 425 degrees.
  2. Place the veggies on a cookie sheet and drizzle with olive oil, sprinkle with garlic, salt and pepper. Toss to coat.
  3. Bake for 25 minutes or until the veggies are soft and beginning to brown.
  4. Remove from the oven and sprinkle with parmesan cheese.
  5. Serve immediately with Stouffer’s Macaroni & Cheese.
