SIMPLE ROASTED GARLIC VEGGIES
INGREDIENTS:
- 1 1/2 Large Heads of Broccoli, chopped
- 2 1/2 Cups Baby Carrots
- 3 Cups Brussels Sprouts, halved
- 2-3 Tablespoons Olive Oil
- 4 Cloves of Garlic, minced
- 2 Teaspoons Kosher Salt
- 1/2 Teaspoon Fresh Ground Black Pepper
- 1/4 Cup Parmesan Cheese, grated
DIRECTIONS:
- Preheat the oven to 425 degrees.
- Place the veggies on a cookie sheet and drizzle with olive oil, sprinkle with garlic, salt and pepper. Toss to coat.
- Bake for 25 minutes or until the veggies are soft and beginning to brown.
- Remove from the oven and sprinkle with parmesan cheese.
- Serve immediately with Stouffer’s Macaroni & Cheese.
